01 - Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
02 - Add diced onion, minced garlic, and bell pepper to the skillet with the beef. Sauté for 2-3 minutes until vegetables soften. Transfer mixture to the crockpot.
03 - Pour corn, diced tomatoes with juices, green chilies, black beans, and kidney beans into the crockpot.
04 - Pour in beef broth. Sprinkle taco seasoning, cumin, black pepper, and salt over all ingredients. Stir well to combine.
05 - Cover and cook on Low setting for 6-7 hours or on High setting for 3-4 hours until flavors meld together.
06 - Taste the soup and adjust seasonings if needed. Serve hot topped with shredded cheese, sour cream, cilantro, jalapeños, or tortilla chips as desired.
