01 - Divide ground beef into four equal portions. Flatten each into a patty approximately 1/3 inch thick.
02 - Generously season both sides of each patty with kosher salt and freshly ground black pepper.
03 - Place skillet or grill over medium-high heat. Add butter or oil and allow to melt and coat the surface.
04 - Place patties in the hot skillet. Cook for 2-3 minutes per side until well-browned and cooked through to internal temperature of 160°F.
05 - During the final minute of cooking, place a slice of cheese on top of two patties. Cover briefly to aid melting.
06 - Stack one cheese-topped patty with a plain patty, cheese side facing down, creating two double-patty stacks with cheese sandwiched between.
07 - Layer optional pickles, tomato, grilled onion, and lettuce between or atop patties as desired.
08 - Transfer to plates and serve hot while cheese remains melted and patties are at peak temperature.
