A soothing blend of fresh mint, honey, and lemon perfect for a refreshing and flavorful drink.

# What You'll Need:

→ Herbal Base

01 - 2 cups water
02 - 1 large handful fresh mint leaves, plus extra for garnish

→ Sweetener & Flavor

03 - 2 tablespoons honey
04 - 2 tablespoons freshly squeezed lemon juice

→ Optional Garnish

05 - 2 lemon slices

# How to Make It:

01 - Bring the water to a boil in a small saucepan or kettle.
02 - Rinse the mint leaves and gently bruise them to release their oils.
03 - Place the mint leaves in a teapot or heatproof jug. Pour the boiling water over the mint leaves. Cover and let steep for 5–7 minutes, depending on desired strength.
04 - Strain the tea into cups, discarding the mint leaves. Stir in the honey and lemon juice until fully dissolved. Garnish each cup with a lemon slice and extra mint leaves, if desired.

# Expert Advice:

01 -
  • The honey mellows the mints natural bite into something smooth and almost creamy
  • Lemon transforms what could be a simple herbal tea into something that feels like sunshine
  • Fresh mint leaves instead of dried make all the difference between meh and magical
02 -
  • Letting the mint steep too long makes the tea taste bitter and grassy
  • Add honey while the tea is still hot enough to dissolve it but not scalding
  • The lemon goes in last because heat can make fresh lemon juice taste weirdly metallic
03 -
  • Grow mint in a separate pot because it will take over your entire garden given the chance
  • When buying mint look for stems that feel firm and leaves that perk up when you touch them
