# Expert Advice:

01 -
  • They hold together perfectly without being dense or falling apart on the grill, which is honestly the hardest part of any veggie burger.
  • The chipotle mayo adds a smoky kick that makes people stop mid-bite and ask what you did.
  • Four patties, thirty minutes, and you've got dinner for a crowd or meal prep sorted for the week.
02 -
  • If your mixture feels too wet or fragile before cooking, you can chill it for 30 minutes, which helps the patties hold their shape and actually makes them easier to flip.
  • Don't skip the vegan mayo in the chipotle sauce because the richness is what makes your mouth register this as a proper burger, not a bean patty on bread.
03 -
  • Make the patties ahead and refrigerate them uncovered for up to two days; they'll firm up and cook even better with a more pronounced crust.
  • If you're cooking for a crowd, you can hold finished patties warm in a 200°F oven while you finish the rest, which means everyone eats while the burgers are still hot.
