Crispy Greek Fried Cheese (Printable)

Golden crunchy coating with melty cheese inside. Ready in 20 minutes.

# What You'll Need:

→ Cheese

01 - 8.8 oz firm Greek cheese (Kefalotyri, Graviera, or Halloumi)

→ Coating

02 - 2.8 oz all-purpose gluten-free flour (or regular flour if not gluten-free)
03 - Freshly ground black pepper, to taste

→ Frying

04 - 3 tbsp extra virgin olive oil (for frying)
05 - Lemon wedges, to serve

# How to Make It:

01 - Cut the cheese into ½ inch thick slices or wedges for uniform cooking.
02 - Pat the cheese dry with paper towels to remove excess moisture for better crisping.
03 - Place flour on a plate, season with black pepper. Dredge each cheese slice in flour, coating both sides evenly. Shake off excess flour.
04 - Heat olive oil over medium-high heat in a non-stick skillet until shimmering.
05 - Add cheese slices to hot oil. Fry for 1-2 minutes per side until golden and crisp.
06 - Remove from skillet and drain on paper towels. Serve immediately with lemon wedges for squeezing over the hot, crispy cheese.

# Expert Advice:

01 -
  • It comes together in barely 20 minutes but tastes like something youd order at a seaside taverna after a long day swimming
  • The texture contrast between that shattering crust and molten interior is absolutely addictive
02 -
  • Moisture is the enemy of crispy coating, so do not skip the paper towel drying step
  • The flour should be lightly coating, not thick, or you will lose that cheese-to-crust ratio
03 -
  • Room temperature cheese fries more evenly than cold from the fridge, so let it sit out for 15 minutes before cooking
  • If you are making a large batch, keep the finished pieces warm in a 200°F oven while you fry the rest
