01 - Line a baking sheet with parchment paper to prevent sticking.
02 - Insert a skewer or lollipop stick into the center of each marshmallow, pushing about halfway through for stability.
03 - Place chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring thoroughly after each interval, until completely melted and smooth.
04 - Hold each marshmallow by the stick and dip halfway into the melted chocolate. Gently rotate and lift to allow excess chocolate to drip off.
05 - Immediately press the chocolate-coated portion into assorted sprinkles or sprinkle them generously over the wet chocolate before it sets.
06 - Stand the dipped marshmallows upright on the prepared baking sheet. Let chocolate set at room temperature for approximately 15 minutes, or refrigerate for 5-10 minutes for faster results.
07 - Serve immediately or store in an airtight container at room temperature for up to 3 days.
